Spirit:
Great Budget Airline for short flights. There are no frills, so don't expect any. The tickets are cheap, seats are small and there is a charge for everything. If a flight is over 2.5 hours we always upgrade our seats to the front of the plane. They are big and comfy and you'll forget that you didn't spend a lot on the tickets. Drinks are reasonably priced, 2 shots and a mixer will set you back $13. There's nothing to complain about there, cheaper than any restaurant I've been to. Flight attendants are friendly, Landings are good, no complaints from us. The big thing with Carriers like Spirit is to remember that you didn't pay a lot for your ticket, and set your expectations there and you will be fine. They are not Emirates! If you think that you will be flying Emirates you will be disappointed. We fly Spirit often and we have LITERALLY never had a problem.

Leg Room: 1 if you choose a regular seat. 10 If you choose the Large Comfy Seat.

American Airlines:
They have been popping up with lot of Great Pricing for International Travel. We had an unfortunate experience with them in January 2017 and we had to break up for a while. However we have chosen to salvage the relationship.
Rating (1-10 with 10 being Great):
Leg Room: 3, Seats are a tad bit better if you purchase extra legroom. Brings them up to a 7. We typically will choose extra legroom and choose seats without seats in front of us to maximize room.

Food: 6 Basic, but Soft Drinks, Water, Juice and Wine are free on International Flights

Aero Mexico:
We love AeroMexico the planes are in excellent condition. The pilot are A1. I didn't even realize the plane had landed it was so smooth. The seats are generously sized and there was no need to upgrade our seats. The food served is good quality and not a bunch of processed junk. Which is always nice.

Vueling:
There were 2 drink carts on our flight and we were seated in the middle of the plane. One cart started in front of us and the other directly behind us. We were missed, which is fine mistakes happen. I believe both carts thought the other had gotten to us. Both carts were put away and once we saw a flight attendant we advised that we were missed and that we would like to place an order. He told us that we were not missed and said that he would be right back. He came back about 2-3 minutes later and informed us that he checked with the other flight attendants and we were not missed we simply declined to order but he would take our order anyway. His tone was rather condescending and it made us very uncomfortable. We decided not to order and told him no thank you.
This could be have been handled completely differently, Customer service is the cornerstone of any consumer based business. Rather than scold us and call us liars, all that he needed to do was simply take our order. Instead we were made to feel very poorly and we are not sure we would recommend Vueling to anyone if this is how customers are treated. This is our sole issue with the airline. The plane was great, the gate staff were great, the ticketing agents were great. The website was very easy to use and the boarding pass was electronic and was placed in my apple wallet.
We did upgrade to XL seats (We are both 6'1), And XL was the Exit Row.
Forgot to mention the same flight attendant came and took my blanket as it was a "safety" issue during landing.

Royal Air Maroc:
Literally loved this airline.
Emails and updates were fast and efficient whenever there were any types of changes.We boarded the plane pretty quickly, the flight attendants were warm and welcoming. One even woke me up from my nap to see if I wanted anything to eat or drink. I was checked on during the flight to make sure I was okay and asked if I needed anything. The flight crew were all smiles.
Seats were a little tattered on the plane, but still very comfortable. It was obviously an older plane but the seats were very roomy, nothing like you see in the USA.
We will definitely be flying Royal Air Maroc again on our next Moroccan adventure!

WestJet:
I had never heard of WestJet prior to booking a flight on google.
It was a nice flight. Seats are 31-32 inches which is great for someone like me with really long legs. They offer inflight entertainment and WiFi. They also have an option to preorder your meals prior to departure. Flights are inclusive of complimentary drinks and a small snack.
I will say we did have one issue with check in at the Regina (YQR) airport. I contacted Westjet once we made it back home and they worked very quickly to make things right. We will be Westjet customers for life.

Arrival/Departure Time: 5, We left late to our destination and were delayed 2 hours on our trip back home. We didn't complain, and received $25 in credits for each passenger via email the next day after our flight.
Food: 0. There were literally no drinks or snacks available to purchase because the flight wasn't catered.
